Grilled Masala Cauliflower
This recipe was inspired by my mother-in-laws South Indian cooking. Many of us in the States think no further than butter chicken and samosas when we hear the words “Indian food”. There’s much more to the culture and diversity of cuisine in this vast land. The south is a less sauce heavy region and this dish nods to that style.
Grilled Masala Cauliflower
Ingredients
- 1 head cauliflower
- 1 tsp garam masala
- 1 tsp degi merch Calcutta chili powder
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp olive oil
- 1/4 cup chopped cilantro
- 1 lemon
Instructions
- Cut cauliflower into medium florets
- Boil for 6-10 minutes until just tender
- Drain and dry
- Coat in olive oil
- Dust with spices and mix thoroghly
- Place flowets on hot grill, flipping until they beging to char
- Plate. Finish with chopped cilantro, a drizzle of olive oil and a squeeze of lemon
