As a guest in the LeBright’s house they wanted to cook me up a LeBright special. Erica wanted to make something easy but something that I have never had before. When she mentioned Mexican Lasagna I was definitely curious. What could that be? Lasagna noodles with Mexican ingredients. Hmmm, different. I had to try it.
This was a pleasant surprise that I can’t wait to try in my own oven at home. I had seconds right away but then was a bit piggish and went for thirds. This was different, good and easy to make. Lets see if it is better the 2nd day like regular lasagna is. Mexican Lasagna breakfast? Really? No! Maybe?
