Superfood Bowl

This year the superbowl is at my cousins place and we are calling it the superfood bowel because there is going to be a ridiculous amount of eats. The above is the raw uncased sausage that is going to be in my Stromboli. Got up early to start the cooking. Smells great in the house. Hope is all works out. I already had a failed attempt at making fresh baked potato chips. I think it is just easier to buy a bag of some sort of kettle chip. The slaw came out great and I’m also going to attempt a marsala roll. To be continued after the superbowl….

Thanksbringing 2012

This year for Thanksbringing we decided to try our best not to bite off more than we can chew. Our strategy was simple, focus on meat that cooks itself. The above lamb was one of our 4 meat dishes. Originally this lamb shoulder was spun on the rotisserie but a bad drip pan and small fire changed it’s fate. Finished in the oven with a lovely onion and wine sauce by my neighbor, the ever present Horst.

Hurricane Sandy Egg Sandwich

The NYC Subway has closed for the second time in it’s 109 year history. The crippling effects of this are lost to the rest of the world, to some degree, unless you are a NYer. Not to be snarky, exclusive or belittle those Floridians and other places that have felt devastating effects of weather with my words BUT, just that the 9 million plus of us use the subway for just about everything from getting to work to getting groceries. When it stops, so does New York City. Confined to our neighborhoods, the wine shop and video store get mobbed in preparation for the storm. The bread and milk disappear from the supermarket shelves and the streets thin out with people.

Since the majority of us in the tri-state are sitting at home working, pretending to work or playing, I though a little meal chronicle would be fun. Please feel free to send or comment with your own hurricane snacks.

Porchetta Practice

This past weekend turned into a full on assault of the market, the kitchen and the stomach. The highlight was definitely the pig. Knowing I had 20ish people stopping by on Saturday afternoon I spent Friday afternoon procuring one of the finest and most delicately butchered pieces of meat you can buy.

In Italian porchetta refers to a whole pig that is deboned, stuffed with herbs, rolled and tied and then slow roasted for hours. Street vendors slice off sections of it and put it in panini. Restaurants cut thick cross sections and serve it as an entree. In Rome you can’t walk two blocks without seeing a vendor.

We were not going to roast a whole stuffed pig BUT…

Birds Dinner Planning

The Forking Tasty test kitchen is heating up for September. Some how we found ourselves in the planning phase of three dinners. The trio includes a continuation of the Italian season, an all poultry dinner and King Kong which will take place in a very special location.

With no time to waste we’ve been testing out some different poultry to see what might work and it hasn’t been too successful. It may look good, like the braised squab above, but one bite and your tongue will curse your eyes.

Low Carb Pizza

I made pizza the other day that was low in carbs. The trade off it is basically made of cheese so it is high in fat. I used Almond Flower to make my crust with a little baking powder and a brick of Mozzerella. Yes, a brick and that was just for the crust. I melted the shredded cheese and added the rest. Mixing it was a workout. My arms were feeling it and I probably burnt off some calories before the feast….

The Canadian is having a France fetish this year. She recently dug into David Lebowitz book “The Sweet Life in Paris”, which she loved. It inspired a test kitchen experiment that began with this chocolate delight pulled from the pages of his book.
